Yummy, love it


I had a craving for something a little heartier this morning when I woke up. Corned beef hash sounded really good for some reason, but of course, not having any leftover corned beef or potatoes just lying around, I had to improvise. Sweet potatoes (close enough-and a lot better for you then regular ol’ taters!), and some thick-cut bacon-perfect! Sweet potatoes are this sort of awesome super food to me. They give me lots of energy, fill me up, and go well with a lot of other things. They are in fact, one of my absolute favorite foods of all time. This recipe is pretty quick to make, and is good for mornings when you want something savory, or more substantial than yogurt and granola.

3-4 pieces of bacon, cooked and chopped into pieces
1/2 yellow onion, roughly chopped
1 medium sweet potato, peeled and chopped into bite size pieces
